Healthy recipes for low income families: Pancakes

Forget about buying pancake mix. You can have fresh home-made pancakes for the family and you will know and have control over the ingredients. If your family is not gluten intolerant here is a recipe for you:

  • 2 C unbleached flour
  • 1 Tbsp. aluminum free baking powder
  • 1/2 tsp. sea salt
  • 1 Tbsp. ground flax seed
  • 1 large cage free organic egg
  • 2 1/4 C organic milk
  • 2 Tbsp. extra virgin olive oil

Mix dry ingredients together in a large bowl. Wisk egg, milk, and oil together then pour over dry ingredients. Stir well. Pour 1/3 cup of batter onto hot oiled griddle, cook until small bubbles form then flip over and cook the other side. Serve with 100% maple syrup or home-made fruit sauce.

Makes about 10 pancakes. Enjoy!

If your family is gluten intolerant, try this one instead:

  • 2 C brown rice flour
  • 1 Tbsp. aluminum free gluten free baking powder
  • 1/2 tsp. xanthan gum
  • 1/2 tsp. sea salt
  • 1 Tbsp ground flax seed
  • 1 large cage free organic egg
  • 2 C almond milk, coconut milk, or organic milk
  • 1/4 C water
  • 2 Tbsp. extra virgin olive oil or melted coconut oil
