The consistency is sort of pancake like, but they are sweet, and oh so delicious. It makes four cookies (two servings). All in all, it takes about 10 minutes to make, and no time to devour!
What you need:
- 1/2 c. rolled oats
- 1 whole egg
- sprinkle of cinnamon
- 3 packets Truvia
- 1/2 t. vanilla extract
- 1/4 c. pumpkin
- Stir up all ingredients, batter will be pretty thick
- Divide into 4 cookie patties
- Cook on the stove in a sprayed non stick skillet until golden brown
Top them with pumpkin-maple butter and a sprinkle of raw sugar or Top with a cream cheese frosting: 1/4 c. reduced-fat cream cheese, 3 packets Truvia, 1 t. vanilla extract, or all-natural fruit preserves on top.
One serving (two cookies without topping) is just 136 calories, 19 g carbs, 4 g fat, and 6 g protein
