Healthy Pesto Zucchini Pasta

Do you crave pasta, but are not able to tolerate gluten or wheat? Are you on a low-carb diet, but crave your favorite pasta dish? Try this incredibly delicious alternative for a guilt and allergen free pasta treat!

Zucchini pasta:
Choose smaller zucchini for a less bitter taste. Create long spiral strips by using the spiral blade on a vegetable slicer (click HERE for an example). Place the spiral strips of zucchini on a dish and top with your favorite sauce. The zucchini can be eaten raw, but if desired it can also be lightly steamed or microwaved for a few seconds if preferred warm.

Sauce options:
• Tomato sauce
• Alfredo sauce
• Sautéed vegetables prepared with various sauces (Szechuan, terakihi, creamy garlic, etc.)
Pesto sauce (as shown)

Homemade healthy pesto sauce:
In a food processor, pulse:
2 cups packed fresh organic basil leaves
½ cup pine nuts
½ cup organic extra virgin olive oil
½ cup organic parmesan cheese
2 cloves fresh organic garlic (optional)
Salt and pepper to taste
