Healthy Meatless Italian Peppers and Onions

Many people are very hesitant about eating the meatless meat products. Many of them don't have the same texture or greasy flavor that we enjoy, but what they do have is less calories. Cooked right, these meatless meat products can fool even the most stubborn eaters.

Give this recipe a try, and see if they can taste the difference.

Calories Without Pasta: 119

Calories With 1 cup cooked Whole Wheat Pasta: about 320

The Recipe:

1 Package of Lightlife Smartground Mexican Style Meatless Meat

1 Onion Sliced Thin

3 Bell Peppers ( any color) Sliced Very Thin

1 Package Sliced Baby Bella Mushrooms

1-2 TBS minced Garlic

1 TBS Capers

1 Small Can of Tomato Paste (abotu 1/2 a cup)

1 TBS Garlic Salt

1 TBS Onion Powder

1 TBS fresh oregano

1 TSP Dried Red Chili Flakes

1 TSP Dried Basil Or Fresh

1/2 TSP Fennel

Water as Needed

Add thinly sliced onions and bell peppers to a saute pan. Let them cook until the onions are starting to become transparent and the bell peppers are flexible. (about 10 minutes). Then add the garlic and mushrooms. (Let simmer another 5 minutes).

In a measuring cup, add 1 tbs of paste and 1 cup of water. Mix until the water turns to sauce and add to the pan. Let simmer 1 minute. Continue to add the tomato paste with water until the can is empty and all the paste is in the saute pan. Turn the heat to medium. Add the spices, onion powder, garlic salt, oregano, chili, basil, and fennel. Let simmer for 20 minutes or until the mushrooms are soft. Finally, add the package of meatless ground beef to the pan and let cook another 10 minutes.

Serve on top of whole wheat pasta and Parmesan cheese!
