Healthy low-fat sweet and white potato wedges yummy with barbecue or burgers

Potato wedges are a favorite side with barbecue, fried chicken and burgers. Typically they are lightly battered and deep fried, making them a not-so-healthy vegetable. This is a lightened, healthy version that is as easy to make as it is yummy. You won't miss the deep fried version once you have mastered these.

Healthy low-fat sweet and white potato wedges

Ingredients:

  • 2 large baking potatoes
  • 2 large sweet potatoes
  • Spray butter
  • Extra Virgin Olive Oil
  • 1 ½ teaspoon Roast beef seasoning or dried herbs of choice (thyme, rosemary, oregano are a good combination)
  • ½ teaspoon Garlic powder
  • ½ teaspoon Sea Salt
  1. Bake potatoes in oven or microwave, just until tender all the way through, but not mushy. Cut into wedges, about 6 per large potato. (Can use refrigerated leftover baked potatoes)
  2. Let cool, then put on a sheet pan and coat potatoes with spray butter. Sprinkle 1 ½ teaspoon roast beef seasoning, or ½ teaspoon each dried thyme, rosemary and oregano all over potato wedges. Add garlic powder and sea salt.
  3. Place on a preheated grill pan set to medium high (or in a large skillet) that’s been lightly coated with olive oil (just a couple of tablespoons). Cook until the bottom is crispy, then turn and repeat.
