The Healthy Greek Eats collection of dips, spreads, yogurt, olive oils, and more average $3-5 and are available throughout the Orlando area. This delicious creamy and crunchy chicken recipe features HGE hummus and comes out to only about 350 calories per serving. (Pretzel and hummus crusted chicken)
Quick and easy humzel chicken satisfies those creamy, crunchy, and salty cravings without overloading on calories. The layer of hummus helps keep the chicken moist, resulting in a delicious protein-packed entrée.
6 chicken cutlets
8oz Healthy Greek Eats hummus
1 cup crushed pretzels
Preheat oven to 400 degrees. Cover a baking sheet with aluminum foil for easy serving and clean up.
Lay chicken cutlets on baking sheet. Season both sides, keeping in mind that the pretzel coating will add salt. (I like McCormick Perfect Pinch Sicilian for great flavor and a little kick). Spread about two tablespoons of Healthy Greek Eats hummus on the top of each cutlet, or enough that the top is coated with about ¼ inch thick layer of hummus. Coat the cutlets with the crushed pretzels.
Bake chicken for 18-20 minutes.
Makes about 3 servings
Serve with garlic sautéed asparagus and lemon-butter orzo or your favorite healthy sides.
