With Halloween over, the holiday season officially begins. Thanksgiving feasts, holiday cards, pictures, planning and parties are soon to take over.
With less time, thanks to shortening days, and more to do for the holiday season, planning healthy, hearty meals that the whole family will enjoy on these cold days seems daunting at best. Making them on an already tight budget that gets tighter at this time of year is even more challenging. What you need are some healthy, easy budget friendly comfort food that the whole family will love.
A simple, healthy Meatloaf recipe that's gluten free and hearty served with Garlic Mashed Potatoes and Roasted Asparagus makes a great weeknight meal that's time-saving too!
- 2 lbs ground meat (beef, turkey, chicken, pork or a combination of these. Turkey, chicken and pork are lower in fat than beef)
- 1 cup vegetable or beef broth
- 3/4 cup gluten-free oats
- 1 egg
- 1 onion, chopped
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and Pepper to taste
- 1 Tablespoon Worcestershire sauce (there are gluten free brands)
- 1 Tablespoon ketchup (again make sure it's gluten free)
In a small bowl mix together Worcestershire sauce and ketchup. Set aside
In a large bowl, combine broth, oats, egg, onion and seasonings.
Add meat and, using hands, combine just until mixed. Do not over mix the meat.
Place in a loaf pan and coat top with ketchup mix.
Bake for 90 minutes. Let rest a few minutes before slicing and enjoy! You could also put the mix in muffin cups for individual meatloaves!
