Orange Nuts
- 1 1/2 cup sugar
- 1/2 cup orange juice
- 1 tbsp grated orange peel
- 2 1/2 nuts
- Cook sugar and orange juice until thick (mixture can form a soft ball on a spoon)
- Remove from heat, add orange peel and nuts
- Stir until the syrup looks cloudy
- Drop spoonfuls onto waxed paper
***Orange nuts harden quickly so if spoonful is too large quickly separate into smaller portions
Nut Chews
Mix ingredients in this order:
- 2 cups ground nuts
- 1-cup brown sugar
- 2 egg whites, unbeaten
- 1 tsp vanilla
Drop teaspoons of mixture onto greased pan. Heat oven to 400 degrees, place Nut Chews in oven, turn off oven and let Nut Chews bake until oven is cool.
Ways to Grind Nuts
- Blender or food processor-be careful not to over chop or the oil in the nuts will turn the mixture to a paste
- Put nuts in a plastic bag and use a rolling pin
- Put nuts in plastic bag and crush with the head of a meat mallet
- ***Kids will enjoy crushing nuts with rolling pin or meat mallet.
