Healthful onion rings do exist

No, the title that you just read is not an oxymoron. It's possible! Onion rings made at home can be just as good as the ones at your favorite restaurant, but unbelievably healthier. If you're cooking for friends, kids or even the not-so-into-healthy-eating spouse, then shock them with this delicious recipe. Not only will they get a low fat, low calorie snack, but they’ll also get all the health benefits of onions, which have been shown to have a protective effect against cardiovascular disease and cancer.

Ingredients:

  • Nonstick cooking spray
  • 1 cup plain bread crumbs
  • 3 tablespoons melted butter
  • ¼ teaspoon salt
  • 2 medium Vidalia onions, cut into ¼-inch slices and separated into rings
  • 2 egg whites, beaten slightly
  • Waxed paper

Directions:

  1. Preheat oven to 450 degrees F.
  2. Coat a large cookie sheet with nonstick cooking spray.
  3. In a small bowl, stir together bread crumbs, salt and melted butter. Spread about ¼ of the crumb mixture onto a sheet of waxed paper.
  4. Using a fork, dip each onion ring into the egg whites, then into the bread crumb mixture, coating well.
  5. Replace wax paper and add more of the crumb mixture as needed until all the onion rings are coated. Arrange coated onion rings in a single layer on the cookie sheet.
  6. Bake for 10-12 minutes or until the coating is crisp or browned, as desired.
