Healing Turmeric: Fresh Turmeric Soup

Turmeric is considered to be a healing food item in many places in the world and was recently touted as a go to item to add regularly to a diet. Fresh Turmeric Soup is a memorable soup, high in texture and fiber.

Whole Turmeric can be purchased locally at the Super Cao Nguyen Grocer, which is just off 26th and North Classen, behind the Giant Milk Bottle. And by the Giant Electric Palm trees. For real. For real. A multiplex grocer, fishmonger, baker and restaurant this facility serves a variety of specialty foods from too many cultures now to mention.

Fresh Tumeric Soup

In olive oil, butter or lamb fat ( this recipe photographed used the latter) brown in a skillet 2-4 Tbsp

1/2 c celery, peeled of strings and sliced thinly

1/2 c onion chopped finely

3 cloves of garlic, peeled and chopped or smashed

Stir and cook to transparency, transfer with cooking oil to stock pot

In a large stock pot

6 medium sized pieces of Turmeric wash and slice thinly, shred or grate ( powdered Turmeric would probably work, but it has a completely different taste than the fresh does and then the soup is down one veg)

6 cups of water

1/2 c carrots

3 cups of greens ( chopped spinach, bok choy, cabbage or a mix) Spinach may disintegrate, and the other two hold their form. Turnip nor Kale appears a not such a good idea due to strong taste competing with the Turmeric.

1/2 bag of cubed, peeled butternut squash

3 small Yukon gold potatoes, cubed ( peeled here, because didn't want skins to compete with Turmeric)

Boil these ingredients until satisfied with level of softness or stock has thickened to approval. The Turmeric will change the stock and veg to a light yellow green gold.

Add 1 can of large Red Kidney beans rinsed and drained. ( these beans are in the top 5 items that improve digestion processes second to super high fiber content)

1 cup Star Pasta, cooked to direction son the package ( this is typically sold in the Hispanic food section)

Add and warm to a low boil. Turn the heat off, so as not to disintegrate the pasta.

Serve hot, with salad and a variety of crackers and cheeze.

This is a hefty soup, which is memorable due to the color, aroma and how filling small portions can be.

Freezes very well.
