In this week’s Healing Food Highlight, we are shining the spotlight on pecans. I am personally OBSESSED with pecans & use them in recipes of all kinds, all year round.
Pecans are a natural, high-quality source of protein that contain very few carbohydrates and no cholesterol. Eating just 1 ounce of pecans (or about 20 halves) equals two servings from the meat and bean group and 2 teaspoons of oil.
Pecans contain more than 19 vitamins and minerals:
- vitamin A
- vitamin E
- folic acid
- several B vitamins
- oleic acid
Pecans are also loaded with natural antioxidants. Antioxidants are substances found in foods that protect against cell damage. Naturally-occurring antioxidants in pecans may help contribute to heart health and disease prevention, according to a study at Loma Linda Univesity. The results were published in the January 2011 issue of The Journal of Nutrition.
Recipe of the Week:
Pecan-Basil Cheeze Sauce
- 1 cup of nutritional yeast
- 2 tbsp of basil (dried or fresh)
- 1/4 cup of pecans
- 1/2 cup of filtered water
- 1 tbsp of turmeric
- 1/3 cup of pre-made salsa:
Salsa: 2 tomatoes, 1 poblano pepper, 1 jalapeno, 1/2 onion, 2 garlic cloves, 1/2 cup of cilantro, Himalayan pink salt, 1 tsp apple cider vinegar
1. Blend together at high for 1 minute or until creamy.
2. Add cheeze sauce to a pizza, pasta, or stir-fry.
