Chocolate holidays, don't you love 'em? Well, Feb. 28 is National Chocolate Soufflé Day. Yes, it's a made-up holiday but anything involving chocolate is more like a religious experience to me, so game on!
In case you don't know, and I'm sure you do, a soufflé is a light, airy sweet or savory dish whose name derives from the French for "to blow up" or "to puff up." Soufflés are made mainly of egg yolks, beaten egg whites and sweet or savory ingredients.
Pastry chef Aaron Lindgren of Benny's Chop House (444 N. Wabash Ave., Chicago 60611, 312-626-2444) has perfected the art of the chocolate soufflé. So head on over to Benny's and get yours while you can. Soufflés must be prepared à la minute (to order), so they take a little time. If you like your dinner to move along without long intervals between courses, it might not be a bad idea to let your server know at the start of the meal you'll be having soufflé for dessert.
