Guinness Cupcakes with Bailey's Cream Cheese Frosting

I love to celebrate St. Paddy’s Day with homemade classic food and drink (dyed green, of course). This year I created a delicious Guinness spiked cupcake treat and homemade frosting with Bailey’s.

With this recipe, licking the beater could be the equivalent of taking a shot! Cheers!

Ingredients

  • 1 ½ cups Guinness
  • 1 stick plus 1 tb unsalted butter
  • ¾ cup unsweetened cocoa powder
  • 2 cups of dark brown sugar
  • ¾ cup sour cream
  • 2 cups flour
  • 2 eggs
  • 1 tb vanilla extract
  • 2 ½ tsp baking soda

Frosting

  • 8 oz cream cheese
  • ½ cup Bailey’s
  • 1 ¼ cups confectioners’ sugar

Directions: Preheat oven to 350° and grease a muffin tin. In a saucepan combine the Guinness and butter over medium heat. Once the butter is melted, remove mixture from heat and whisk in the cocoa and sugar.

In a separate bowl whisk the sour cream with the eggs and vanilla together. Add the beer mixture and mix thoroughly. Next, fold the flour and baking soda into the batter. Pour the batter into muffin molds and bake for 20 minutes or until inserted cake tester comes out clean. Allow the cupcakes to cool completely before adding frosting.

Frosting: Using an electric mixer, beat cream cheese until smooth. Gradually add in confectioners’ sugar with the mixer on low speed, increasing the speed once all of the sugar is added. Add Bailey’s and beat until smooth. Frost cupcakes and enjoy.

*To create a thinner glaze, use a tablespoon or two more Bailey’s. For a thicker frosting, add more sugar.

Makes one dozen cupcakes
