South American & Cuban cuisine: Fried yellow plantains with shrimp al Ajillo
Plantains
Ingredients
- 5 ripe plantains
- vegetable oil
Preparation
- Cut both corners of the plantains and peel off the skin.
- Once plantains are clean, slice each plantain making 6 pieces.
- Place oil in a pan and heat on medium-high.
- Wait a few seconds once the oil is hot, and add slices of plantain carefully.
- Brown them to a golden color and drain plantains by placing them on a paper towel.
- For a wonderful combination, serve with shrimp al ajillo (garlic shrimp), black beans and rice.
Shrimp al Ajillo
Ingredients
- 1 garlic head
- ¼ large onion
- 2 tsp. lemon pepper
- 1 ½ cup olive oil
- 5 stems of cilantro
- 7 lbs. shrimp, butterflied
- 1 block of butter
Preparation
- Wash and drain shrimp.
- In a blender, mix onions, garlic, lemon pepper, olive oil, cilantro, and add mixture to shrimp.
- Heat the butter in a pan on medium heat and add the shrimp mixture, cooking until golden brown.
