Guama's fried plantains with shrimp

South American & Cuban cuisine: Fried yellow plantains with shrimp al Ajillo

Plantains

Ingredients

  • 5 ripe plantains

  • vegetable oil

Preparation

  1. Cut both corners of the plantains and peel off the skin.
  2. Once plantains are clean, slice each plantain making 6 pieces.
  3. Place oil in a pan and heat on medium-high.
  4. Wait a few seconds once the oil is hot, and add slices of plantain carefully.
  5. Brown them to a golden color and drain plantains by placing them on a paper towel.
  6. For a wonderful combination, serve with shrimp al ajillo (garlic shrimp), black beans and rice.

Shrimp al Ajillo


Ingredients

  • 1 garlic head
  • 
¼ large onion

  • 2 tsp. lemon pepper

  • 1 ½ cup olive oil

  • 5 stems of cilantro
  • 
7 lbs. shrimp, butterflied

  • 1 block of butter

Preparation

  1. Wash and drain shrimp.
  2. In a blender, mix onions, garlic, lemon pepper, olive oil, cilantro, and add mixture to shrimp.
  3. Heat the butter in a pan on medium heat and add the shrimp mixture, cooking until golden brown.
