Grilled pineapple, chicken, and avocado salad

Ingredients
2 chicken breasts
2 tsp. olive oil
Salt and pepper to taste
1 pineapple, sliced
8 cups spinach
1 cup blueberries
1 avocado, diced
½ cup feta, crumbled
¼ red onion, sliced

Vinaigrette Ingredients
¾ cup vegetable oil
¼ cup apple cider vinegar
3 tbsp. honey
2 garlic cloves, minced
Salt and pepper to taste

Instructions
Brush the olive oil onto your chicken breasts and top with salt and pepper (more will give you a more flavorful chicken) Grill the chicken and pineapple for 5 minutes on each side or until the chicken has cooked through. Cool for 10 minutes, then cube both the chicken and pineapple slices. While they’re cooling, you can make the vinaigrette. Whisk together all of the ingredients and let sit for 10 minutes. Whisk one more time. In a bowl, combine the rest of the salad ingredients by tossing together. Top with the vinaigrette and serve your eager guests!
