Black beans have been a staple in South American cooking for over 7,000 years.  Full of cholesterol lowering fiber and rich in antioxidants they are also high in magnesium which make them a heart healthy addition to any diet or meal.  While beans are full of protein on their own, they take on a whole new flavor and meaning when cooked with poultry or fish.  Hearty and nutritious this meal makes a simple and satisfying weeknight supper.

Grilling this recipe brings on a new cast of tastes.  For best results be sure to rinse chicken under cold water. Pat  dry with paper towels before adding to a marinade or rubbing with spices.  Charcoal and gas grills should be heated to medium high.  If you prefer your meat with skins, be sure to put it skin side down first, then turn several times while cooking.  Chicken is cooked when you cut into the middle of a thick piece and find the juices running clear.

  • 6 chicken breasts
  • 1 Tbsp Olive oil
  • 2 Tbsp SOUTHWEST SEASONING
  • 1/2 cup diced green bell  pepper
  • 1/2 cup sliced red bell pepper
  • 1 cup whole kernel corn
  • 2 cups black beans (cooked)
  • 1 cup salsa

Rub both sides of chicken with Southwest Seasoning. In a deep dish mix beans, corn, peppers, salsa and oil. Place chicken in the mixture.  Cover and let sit in the refrigerator for at least 1 hour. On a heated grill place 2 strips of aluminum foil and then arrange chicken with 1 cup of the back bean mixture spread evenly over it. Grill with cover down for 20 min. Turn chicken and cook for an additional 15 to 20 min, basting with marinade occasionally. Serve with remaining black bean mixture. This recipe also great with salmon filets.

*If you like it hot use a 1/2 habanero chile, If you like it mild use 1 jalapeno chile, & If your tastes run in between use 2 serano chiles
