Grilled cheese everyone has had at some point. Most of us love a grilled cheese with a side of tomato bisque. Which is delicious but what about when you want a little more substance to your grilled cheese. Adding a few things makes a great sandwich. Starting with delicious bread is a must, a sourdough, whole wheat, or dark rye would be delicious. The more variety of cheese the richer the sandwich will be, but a costco blend of shredded cheese can be just as good. Sauté mushrooms and onions to add to your sandwich, the mushrooms sauté is optional. Cut spinach, tomatoes, mushrooms, and chicken to add a little later. Using a griddle heat up the bread flip it over cover a thin layer of ranch on one piece of bread and a thin layer of thousand island on the other piece of bread. Place your cheese on top of each piece of bread, add the mushrooms and chicken. Once the cheese starts to melt add the spinach and tomatoes. Put the sandwich together and enjoy a delicious grilled cheese sandwich.
