The first things you notice as you enter the Green Earth Vegan Cuisine restaurant is that everything is brightly painted and clean, the food servers attentive and helpful, and the atmosphere casual and comfortable.

You can start with Green Earth appetizers, which include: quinoa sushi, bruschetta, quesadilla, hummus with pita bread, edamame, sweet potato fries, golden crispy rolls, summer rolls, spring rolls, golden wontons, crispy nuggets and nachos ($3.95 to $8.50). For lighter fare you have a choice of six soups, like spinach asparagus, wonton soup and potato chowder ($7.95 to $9.50), or their choice of six different salads ($8.25 to $8.50).

Their main dishes, which are served with brown rice, offer such delights as: veggies en brochette (vegetables grilled on skewers with teriyaki sauce); curry tofu scramble (scrambled tofu, diced red bell pepper, peas, carrots, King oyster mushrooms with curry spice); aubergine grille (grilled eggplant sautéed with soy protein, peas and carrots); Orange imagination; sweet and sour sensation; sautéed vegetable medley; harmonic veggie delight; Mongolian delight; several fried rice dishes and Indian curry tofu ($8.50 to $11.95).

One of their most popular dishes is called Three Flavors, composed of pumpkin, eggplant, tofu, onion, sweet basil, red and green peppers, and King oyster mushrooms with the chef's special sauce ($9.95). It is delicious!

They have no less than 10 pasta dishes, from their very original Conchiglie Ripiene (pasta shells filled with spinach, tofu and vegetable protein with marinara sauce) to more traditional dishes like chow Mein, fettuccine Alfredo and lasagna di verdure (lasagna with eggplant, zucchini, onion, and red and green bell pepper that is served with mixed salad and toasted bread for $11.95.

For more traditional fare, try their burgers, subs and sandwiches (served with sweet potato fries or organic spring mix salad), burritos, fajitas or chick'un wraps. Chick'un is made from textured tofu and seasoned to perfection.

Thirsty? Have one of their fresh fruit smoothies, fresh squeezed fruit or vegetable juice, iced or hot tea, soy milk or a variety of sodas. For dessert they offer heavenly carrot cake, chocolate cake, almond chocolate cake, cheesecake, chocolate cheesecake, green tea cheesecake or Thai banana rolls with ice cream ($4.50 to $5.95).
