I've toured the Green Chile Cheeseburger trail and enjoyed this verde-smothered delight at a number of restaurants. But, after two years, I think I have found the best Green Chile Cheeseburger in Santa Fe (for now).
Inn at the Loretto is a warm and inviting hotel and spa on any day of the year but on a winter night, with the fire going in the huge lounge fireplace, it is extra warm and inviting. Valet parking made it easy to avoid the icy streets in downtown Santa Fe.
The Living Room is the Inn's lounge. With overstuffed leather furniture and warm textiles, it is conducive to rest and relaxation. Add in a $6 Happy Hour glass of wine, some conversation with travelers and you will make this one of your favorite spots to relax and unwind.
It was about 7 p.m. and we were hungry. The bar menu looked good. There was much to choose from including salads, duck carnitas and quesadillas. But what caught our eye on this cold winter night was the “The Madrid.” We found that The Madrid was a Waygu beef burger topped with cheddar, guacamole, roasted new mexico green chile, and chipotle aioli. A side of seasoned French fries rounded out this special burger.
As we waited for our burgers to be cooked to order, a discussion of Waygu beef ensued. Waygu beef, originally from Japan, refers to a highly prized breed of cattle that produces sought-after marbled meat. In fact, the better known Kobe beef is Waygu beef from Kobe, Japan. Nowadays you can find Waygu beef in Japan, Australia and the United States.
Our special Green Chile Cheeseburgers arrived and we were delighted. The burgers were cooked just the way we ordered and the spices and toppings melted together to make for a delightful combination of tastes. Even the French fries were extra good - crisp and well-seasoned.
The green chile was just hot enough so that we knew it was there but not so hot as to overpower the meal. It was this wonderful combination of tastes and the juicy burger that led me to put The Living Room on my list of best places for a Green Chile Cheeseburger!
