It seems that some of the best barbecue (BBQ) comes from the most unlikely seeming places, although among folks that know great barbecue, the unlikely seeming places are exactly where to look for the best barbecue. Full Service BBQ on Washington Street in Maryville is one such place serving just that kind of barbecue, though their take on "unlikely seeming" may well be unique.
Usually, great barbecue is found in little metal sheds or holes-in-the-wall that were once something else and are given away by their top-notch smoker puffing away while secret-recipe meats are slow-roasted to succulent, smoky perfection. Full Service BBQ has the smoker but no metal shed: they've converted a former gas station in Maryville into the place to get some of the best barbecue in East Tennessee.
Where the pumps once stood is a small, steamy booth (at least it's steamy in the winter) where the smoked meats -- chicken, pork, beef, and ribs -- are prepared and doled out to happy customers in their cars in take-out fashion. The chicken and pork are pulled and served on rolls, and the beef brisket is sliced fairly thickly and served on Texas toast, both adorned simply enough with sweet pickles, onions, and and one of three sauces (Tennessee Whisky, Sweet and Hot, or Carolina Mustard). The brisket sees mostly the same treatment except that sliced, pickled jalepenos are provided as well. All of the meats are fantastic... really surprisingly well done.
In addition to the great lineup of meats (which also includes smoked sausage and BBQ nachos), Full Service BBQ has an array of traditional Southern favorite side dishes including mac and cheese, awesome potato salad, delicious creamy slaw, green beans, and baked beans, available in individual sizes, pints, and quarts for good prices. They also have a dollar menu, family packs, and drinks, including sweet tea by the gallon, and a couple of Southern deserts: pecan pie and banana pudding. See their entire menu here.
