Grape-nut Pudding
I've been making Grapenut Pudding ever since I got married, and that's very long time! At first I thought it was a New England thing, since whenever I went out of the area, no one seemed to know what I was talking about. Mysterious I thought! People always assumed it was made with grapes and/or nuts. It's not, and that's the mystery! The pudding is made much like a custard with eggs, milk, vanilla and sugar. But when Grapenuts are added to the mix, it becomes a whole different dessert.
My version of Grape-nut Pudding is made by soaking the grapenuts in scalded or warm milk for 15 minutes, adding it to the rest of the ingredients, and baking in a water bath. The grape-nuts sink to the bottom, and the silky custard remains on top, resulting in a two-layered dessert. The best way to serve this is with a big dollop of fresh whipped cream. Make this humble Grapenut Pudding more elegant with a drizzle of chocolate ganache over the whipped cream as well.
Grape-nut Pudding Recipe
- 3 cups whole milk
- 3/4 cups grape-nuts cereal (not flakes)
- 4 large eggs
- 3/4 cups white sugar
- 1 1/2 teaspoon vanilla
- 1/2 teaspoon ground nutmeg
How To Make Grapenut Pudding
- Preheat oven to 350 degrees F.
- Spray an 8" X 8" baking or casserole dish with vegetable spray. Do not use metal.
- Warm milk almost to scalding. Remove from heat and stir in Grape-nuts. Let sit for 15minutes.
- Meanwhile, in a large bowl with a whip attachment, whisk together eggs, sugar, vanilla and 1/4 teaspoon nutmeg. Whip until well mixed. Add milk and grape-nuts and mix on low only until blended.
- Fill a 9" X 13" pan 1/3 with hot water. Place the prepared 8" X 8" dish into the pan with the hot water. Pour grapenut pudding into the smaller pan. Place the pans very carefully into the oven, and bake for 45-60 minutes or until knife comes out clean.
- Serves 6-8. Can be doubled in a 9" X 13" pan.
- Chill and serve with fresh whipped cream.
Whipped Cream Recipe
- 1 cup Whipping cream
- 1/4 cup powdered sugar (confectioners' sugar)
- 1/2 tsp pure vanilla
How To Make Whipped Cream
- In large mixing bowl, beat cream until it sets up. There's no way to explain how long this will take. Every mixer is different. It should be light and fluffy and look like soft whipped cream. Do NOT let it get to the butter stage which can happen very quickly. If in doubt, under mix. You can always whip it a little more after the sugar is added.
- Add powdered sugar and and vanilla and beat until fluffy and stiff. Do not over beat.

Donna I used to take yogurt to work with me and I kept a box of Grape nuts in the break room and I used to put them in my yogurt for the health and crunch! It was yum! Great snack, an good for you.

There is no need to soak the grapenuts. Just sprinkle on top after you poured the custard then sprinkle on fresh ground nutmeg. I add 1/2 cup golden raisins too.
You will get the 2 layers and a nice top
As a kid , this was my favorite dessert at the Princeton Inn in Chelmsford Ma. I quickly figured out how to make it at home.
I should have mentioned that I use i cup more milk and only 1/2 cup sugar. and a 2 quart casserole.Splenda works fine too. I'm waiting on a batch right now. :-)
