Granby Ranch will host internationally-acclaimed Italian chef Sergio Lorenzi, who will run the Grill at Granby Ranch at the base of the ski area, March 4-10. During his visit, each day will feature a multi-course dinner for under $45, including a la carte options. Lunches will highlight Lorenzi’s pastas, pizzas and desserts.

“He is just a brilliant chef,” says Granby Ranch owner Marise Cipriani, a native of Brazil who married into an Italian family and met Lorenzi some years ago when he was a guest chef in Sao Paulo. “This is food to savor, food that has a reason to exist and has a sense of place and history. The simplicity, the brightness of the herbs, the perfection of the ingredients and flavors make it satisfying at the soul level.”

Lorenzi’s restaurant, SERGIO, was the holder of a Michelin star from 1978 until it closed in 20016. Lorenzi has served as the chairman of the chef’s association in Tuscany and has collaborated with two major culinary magazines in Italy, Grand Gourmet and Vini. He also wrote a book entitled A Tavola in Toscana, and in 1982 the Academie Internationale de la Gastronomie placed him among the 50 master chefs in Europe.

Lorenzi will be bringing special cheeses and sauces with him from Tuscany, and pasta will be made fresh daily on-site for each evening’s menu, which includes…

Antipasti, $6-$10: Fresh salmon with tarragon and chardonnay sauce, capanota of eggplant and diced tomatoes with mint, and prawns in vodka sauce with asparagus tips.

Primi, $8-$10: Ravioli of fresh salmon with chives and butter, penne alla zingara (ham, bell peppers, peas and cream), and potato ravioli with butter and sage.

Secondi, $18-$26: Portfolio “alla Sergio” with potatoes au gratin (a Sergio Lorenzi specialty), salted cod with polenta, and steak “alla Sergio” (sliced steak) with Tuscan white bean salad.

Dolci, $5-$7: Coffee Tiramisu, panna cotta with berries, apple tart, caramelized pears with ice cream, and goat cheese and pear tart.

Prix Fixe Nightly Specials, $45, a four-course meal with one special entrée per night paired with the choice of antipasti, primi and dolci: Veal osso buco with risotto, braised beef with polenta or mashed potatoes, roast leg of lamb with rosemary and over roasted potatoes with carrots in a warm butter sauce, and buffalo pot roast with potato dumplings.
