While Valentine's Day is synonymous with a romantic dinner for two in many people's minds, that's not the only way to celebrate the holiday.

Here's a perfect recipe from Golden Blossom Honey for anyone who's hosting a Valentine's Day bash for singles. These cupcakes are easy to make and can be prepared ahead of time, so you can play the perfect host when everyone arrives. Plus, a little bubbly in the batter (and the frosting) never hurts!

For the frosting:

  • 6 c powdered sugar
  • ½ c butter, softened
  • 3 T Champagne
  • ¼ c + 2 T pulp-free orange juice
  • 3 T grated orange zest

For the cupcakes:

  • 2 1/3 c all-purpose flour
  • 2 ½ t baking powder
  • ½ t salt
  • ¾ c shortening or softened butter
  • ½ c granulated sugar
  • 3 eggs
  • 1 c honey, preferably Golden Blossom
  • ½ c orange juice
  • ¾ c Champagne
  • 1 t grated orange zest
  • 72-74 mini cupcake liners
  • Gold-colored sugar or edible glitter, to taste*


For the frosting:

1. Using a handheld or stand mixer, whip the powdered sugar, butter, Champagne, orange juice, and orange zest on medium speed.

For the cupcakes:

1. Preheat the oven to 350°F.

2. In a medium bowl, mix together the flour, baking powder, and salt.

3. In another bowl using a handheld mixer or stand mixer, beat the butter on medium speed, and gradually add the sugar.

4. Add the eggs one at a time, then add the honey, orange juice, and Champagne.

5. Gradually add the mixed dry ingredients. Once combined, fold in orange zest.

6. Line mini-cupcake tins with cupcake liners, and pour in the batter evenly. Bake until golden brown, about 20-25 minutes.

7. Spread the frosting onto the cupcakes, and top with gold colored sugar or edible glitter.

Makes: 72-74 mini-cupcakes
