Going gluten free just got easier

A healthier diet doesn't have to mean deprivation.  Some eateries are catering to the growing gluten intolerant population. Zpizza is one of those.  Recently the company opened a restaurant in La Quinta, a little over 100 miles east of Los Angeles.  While there are several Zpizza's in LA, this is a first for sunny Coachella Valley.

Next to Henry's Farmers Market on Highway 111 and Adams Street, Zpizza uses certified organic ingredients.  Crusts come either gluten-free, dairy free, or regular.  Cheese choices are vegan and part skim, rBGH free mozzarella.  Given to dairy cows to boost milk production, the hormone rBGH has been linked to breast cancer.  Zpizza has delicious salads, too!

According to The CDC, there are an estimated 3,000,000 people in the United States with celiac disease, a common genetic autoimmune disorder.  Linked to mood disorders, arthritis, fibromyalgia, type I diabetes, and bowel cancer, the only treatment for celiac disease is a strict gluten-free diet.  Many cases of the disease go undiagnosed and untreated.

The symptoms of celiac disease vary, and diagnosis can be difficult to make. Problems arise because of an abnormal immune response to gluten, a substance found in wheat, barley, and rye, that damages villi in the small intestines. This results in a chronic inflammatory state that leads to other health problems. Some common signs and associated disorders include:

• Abdominal Pain/Bloating • Acid Reflux • Anemia • Anxiety/Depression
• Diabetes • Headache/Migraine • Heart Disease • Infertility • Insomnia • Irritability • Irritable Bowel Syndrome • Malnutrition • Arthritis • Autoimmune Disease • Behavior Disorders • Cancers • Chronic Constipation

• Miscarriage• Chronic Diarrhea • Chronic Fatigue • Dental Enamel Defects • Dermatitis Herpetiformis
• Neuropathies • Osteoporosis/Osteopenia • Swelling • Unexplained Weight Gain/Loss
