Many chefs have been long supporters of eating local and going green. Knowing where and how the food on the plate is cultivated can result in more flavorful dishes. Additionally, local farmers and businesses benefit from buying local. On Tuesday, June 3, Prairie Grass Cafe will host a dinner benefiting Go Green Northbrook and Romona School W.E.L.L. garden.

Ardent supports of the green movement, chefs Sarah Stegner and George Bumbaris of Prairie Grass Cafe support local farmers and producers. The fresh, seasonal inspired menu highlights Chicago's Green City Market amd local sustainable farms. Chef Stegner said, "It's all about the quality of the product-its freshness, its flavor and the care by which it has been handled."

Joining chefs Stegner and Bumbaris in this benefit dinner is Convito Italiano chef Noe Sanchez. Since its inception, Convito Café & Market's mission has always been to foster enjoyment of the gourmet foods. With both a cozy art-filled cafe and a marketplace, Convito inspires customers to toast to good eating and great food.

The Go Green dinner benefits two organizations, Go Green Northbrook and Romona School W.E.L.L. Garden. Go Green Northbrook is a grassroots network of residents who volunteer, coming together to bring about initiatives and education towards making their community more environmentally friendly in practice and lifestyle. Romona School W.E.L.L. Garden is a local school garden in Wilmette which provides students and staff opportunities for hands-on learning about growing and planting, and which often supplies chefs' organic vegetables for use in restaurants.

The benefit dinner will begin 6:30 pm on June 3. Guests will enjoy cocktails, hors d'oeuvres, and a four course "green dinner" including wine. The cost is $83 per person including tax and tip.
