Gnocchi alla Cristina


Last week I threw together a dish (as I often do) with the ingredients I had on hand and what looked good that day in Trader Joe's.  The result was a fresh dish that celebrated some of my favorite spring flavors.


  • 1 package gnocchi

  • 1 jar marinara sauce

  • 1 cup artichoke hearts, roughly chopped

  • 1 cup peas, fresh or frozen
  • 1 large or 2 small lemon pepper chicken breasts, roughly chopped


In a small saucepan, warm the sauce, chicken and vegetables together.  Keep warm.


Cook the gnocchi in boiling water for 3 to 5 minutes.  They will float to the top then they are done.


Drain the gnocchi, add the sauce and serve hot.
