Gluten-free recipes in time for the holidays!

It’s that time again! Although it feels impossible (at the time) that you would want to eat anymore after all the goodies served at Thanksgiving, here it is again time to enjoy a great meal, or several with loved ones. There are lots of dinner recipes floating around, but what those of us who like to serve a great holiday brunch? What to serve? Especially for those of us who have gluten intolerance/sensitivity or have guests who do?

Well, here are some great ideas courtesy of Udi’s gluten-free. Take a look at these tasty recipes and decide on one to try this holiday!

Crème Brûlée French toast-

Ingredients:

· 1 quart heavy cream

· 8 oz. egg yolks

· 6.5 oz. sugar

· 1 loaf of Udi’s bread variety

Directions-Combine the first three ingredients in a large mixing bowl or baking dish. Soak bread slices in the batter for at least 5 seconds each. Pre-heat a griddle pan or flat-bottomed sauté pan on medium-high heat with a small amount of butter or oil. Cook bread for approximately 60 seconds on each side until browned and caramelized and the bread pulls away from the pan easily. Be sure to wipe the pan clean after each batch! Enjoy with your favorite condiments.

Serving suggestion: Top with whipped cream, fresh strawberries, and a sprinkling of flax seeds.

Or how about a Caramelized apple ricotta Mexican crepe?

Ingredients:

Apple filling:

· 1 Tbsp. butter or margarine (15 ml)

· 3 Granny Smith apples, halved, cored and cut into ½ cm slices

· 2 Tbsp. white sugar, separated (30 ml)

· ½ tsp. ground cinnamon (2 ml)

Cheese filling:

· •1 cup low-fat ricotta cheese (250 ml)

· •¼ tsp. vanilla (50 ml)

· •2 tsp. white sugar (30 ml)

For the sauce:

· ½ cup water (500 ml)

· 6 Tbsp. white sugar (90 ml)

· 1 Tbsp. butter or margarine (15 ml)
