Gluten free recipe: dairy free tomato cream soup

Creamy and delicious gluten free and dairy free soups are hard to come by. This recipe was born out of a review for Tropical Traditions Coconut Cream Concentrate. This concentrate makes it possible for anyone to create creamy, gourmet-tasting soups with very little effort. Since it is dairy free and gluten free, there is a lot to smile about when the bowl is empty.

Ingredients for Dairy Free Tomato Cream Soup

  • 4 cups strong gluten free chicken broth
  • 2 cups Coconut Cream Concentrate
  • 3 cans diced tomatoes, for a total of 45 ounces
  • 2 cloves garlic
  • Salt and Pepper to taste

Preparation for Dairy Free Tomato Cream Soup

  1. Mix broth and Coconut Cream Concentrate in a large soup pot.
  2. Put tomatoes and garlic in a blender and blend until smooth.
  3. Add the tomato mixture to the pot and bring to a boil over medium high heat.

That’s really it! This recipe is so easy that it can be made on any busy night of the week. It is great for company too. The rich, bisque-like texture and complex flavor will impress even the toughest critics.

The only difficult part of this recipe is getting your hands on the Coconut Cream Concentrate. It is not sold in Kansas City stores, you have to order it online from the Tropical Traditions website.
