It's that time of year! Isn't fall wonderful?!!! It is an amazing opportunity to get children into the kitchen! Take the kids to a pumpkin patch or local farmers market to pick out their own sugar pumpkin. Sugar pumpkins are sweeter and have less water so they are better to use for baking your healthy goodies. The sugar pumpkins can be used for savory recipes too though. Pumpkins are a super delicious and nutritious winter squash to introduce to kids. Most children are already familiar with pumpkin treats and carving them so they should be fairly receptive to cooking and baking with them.
Try this awesome gluten free, wholesome recipe for a seasonal treat!
1 1/2 Cups Cooked Organic Chickpeas
1/2 Cup Organic Pumpkin Puree (canned is fine if you did not make your own)
2 Tsp Pure Vanilla Extract (not the fake stuff)
1 Tsp GMO Free Baking Powder
1/4 Tsp Celtic Sea Salt
1/4 Cup Organic Maple Syrup
1 Whole Foods Brand Whole Trade Dark Chocolate Bar
(Make about 12 cookies)
Pre-heat oven to 350F
Put all of the ingredients (except for the chocolate bar) into the food processor
Next break the bar into squares into the food processor, then pulse the squares until broken well
Use unrefined organic coconut oil to grease baking stone or sheet
Bake for 15-18 minutes
