When I can't make up my mind on what I want to eat, my favorite places to frequent are either a buffet or a salad bar, so trips are made to Souplantation/Sweet Tomatoes in Duluth. I primarily stick to the salad bar offerings, but I was surprised to learn the extent of their gluten-free menu items. Now, they are surprising me again, by adding a housemade gluten-free coconut muffin to their bakery offerings.
The new gluten-free muffin is made with gluten-free flour, eggs, coconut milk, and canola oil and it will only be available through mid-February. It is important to note that this muffin is made in the same environment as their wheat-based baked goods and they are served alongside said goods too. According to the restaurant, due to the nature of the self-serve format, cross-contact may occur. As someone with celiac disease, I won't be trying the muffin, but those of you who don't have any issues with cross contact can now enjoy a warm, bakery treat.
After making the trek to Souplantation/Sweet Tomatoes, I can expand how these muffins are made. They are prepared using the same scoop for batter and the same muffin tins as their wheat-based products. The batter is kept right next to the other batters and the muffins are served right alongside the wheat-based ones. Not an ideal situation for those of us who cannot tolerate cross contact, but there you go.
What I like most about the restaurant, is that they have a book with ingredient listings for every product on the menu, which makes it much easier to figure out what is/isn't safe, especially if an employee isn't familiar with their gluten-free offerings. It is also an inexpensive place to dine with a plethora of gluten-free options. I usually enjoy a baked potato topped with chili along with a salad topped with fresh crispy veggies.
