Gluten intolerance and celiac disease create serious metabolic conditions. These symptoms affect the physiological and emotional state of being. The ingredients in the following recipe contain anti-inflammatory properties as well as necessary nutrients to offset this symptomatology, however; quality B12 with intrinsic factor must be supplemented. The pumpkin alone contains multiple vitamins and minerals often neglected by such a compromised gastrointestinal tract. These alternative gluten free grains allow the gut to recognize the otherwise malabsorbed nutrients.
As always, begin with fresh, wholesome high quality ingredients. These rich, cake-like muffins also make a great bread loaf with a subtle, yet satisfying flavor. Makes 8 large muffins or 14 small muffins.
Preheat oven to 350 degrees F
Sift dry ingredients together:
2 ½ C. Brown rice flour
½ C. Tapioca flour
½ C. Arrowroot flour
1 tsp. Cream of tarter
1 tsp. Baking soda
1/3 C. Turbinado sugar
or Organic cane sugar, if desired
1 tsp. Cinnamon
¼ tsp. Fresh ground nutmeg
½ tsp. Penzey's baking spice
Blend with the following moist ingredients:
1 15 oz. Can organic pumpkin
2 lg. Organic eggs or albumin substitute
1/3-1/2 C. Pear or Apple juice
1 tsp. Vanilla extract
Pour into greased muffin or loaf pans.
Bake for about 15-20 minutes, or until golden brown on top.
This recipe is gluten free, nearly fat free, and if not added, sugar free and loaded with fiber. Fruit substitutions are acceptable without sacrificing nutritional benefit. Appropriate calorie and carbohydrate count are necessary for some dietary considerations.
