Gluten-free goes big: home bakery becomes a store

After a few years of cottage-industry baking and selling at local greenmarkets, Joey Weiss has a stand-alone, full-service bakery offering vegan and gluten-free cakes, pies, breads, cookies and cupcakes. The bigger setting and commercial equipment allow Joey’s Home Bakery - Gluten Free to not only bring more treats to the local markets, but to send care packages year-round to part-time resident customers who love what they’ve tried here.

Inside the bright and modern shop, Weiss is always moving: decorating cakes, proofing dough, answering the phone or talking to customers. And it’s customer need that drives a business such as this. Weiss’ husband has Celiac disease, and with an estimated 15 million people on special diets due to food allergies, a bakery that offers the chance to eat “normally” while adhering to restrictions is a place that folks will look forward to trying out. And while Weiss will continue to offer a range of her products at the Palm Beach Gardens, West Palm Beach and Fort Pierce greenmarkets, the bakery gives her a chance to expand into custom orders and offer large cakes and pies, not to mention offering these goods six days a week.

All the mix bases used in the bakery are made up in the store from whole grain, gluten-free flours. Weiss uses no trans-fats, corn syrup or white sugar in any of her baking. In addition to baking everything fresh every day and making it all gluten-free, some items are also vegan and paleo. If you have a question about any item in the case, you can ask, and as the person who has personally made everything in the store, Weiss will know what’s in it and whether it’s right for you.

The bakery also offers cold and hot beverages and indoor seating, if you cannot wait to get your bakery box home, or you just want to watch Weiss create a lot of fresh-baked magic.
