Who's ready for a healthy summer recipe you can enjoy throughout the fall and winter season, too? I love entertaining in the summertime and serving seafood is one of my favorite things to do! I'm not a fab of large fish like swordfish and tuna because of their high mercury count- but sardines are the perfect way to get my seafood fix and not have to worry about mercury!
During the summer, there is so much talk about what to make and serve for guests - so I'm taking the guess-work out of your holiday weekend and giving you a fun recipe that's simple to follow and nutritious, too! Here's an easy summer salad that's gluten-free, dairy-free, Non-GMO and soy-free. It's chock full of Omega 3's, fiber, CQ10 and Vitamin D to keep you fueled for your beach day or picnic.
Gluten-Free Easy Sardine Salad
• 1/2 cup uncooked quinoa
• 2 tsp. olive oil
• 2 tsp. balsamic vinegar
• 2 Tbsp. fresh lemon juice
• 1/4 tsp. sea salt
• 1/4 tsp. pepper
• 4 cups organic lettuce
• 1 medium heirloom tomato, diced
• 1/2 cup frozen green peas, defrosted
• 1 can BELA Portuguese gluten-free sardines (Lemon Flavor in Extra-Virgin Olive Oil)
• 1 orange or yellow bell pepper, diced
Cook quinoa according to package directions.
In a small bowl, whisk oil, vinegar, lemon juice, sea salt and pepper; set aside.
Remove quinoa from heat; set aside to cool for 10 minutes and fluff with a fork. Add salad greens, tomatoes, peas, sardines and bell peppers; toss to combine. Drizzle with dressing and serve.
