Gluten-Free, Diary-Free Stuffing
Ingredients:
1 Tablespoon canola oil
4 garlic cloves, chopped
2 cups celery, diced
1 cup carrot, diced
5 cups gluten-free bread, cubed
3 tablespoons Italian seasoning
1 1/2 cups turkey, chicken, or vegetable broth
Directions:
- Preheat oven to 350 degrees.
- Meanwhile, In a large skillet, heat oil over medium high heat.
- Saute garlic for 30 seconds.
- Add celery, carrots, and onion and saute for 3 to 4 minutes; remove from heat to cool.
- In a large bowl, mix bread with seasonings until fully coated
- Add cooled vegetables. Slowly pour in broth.
- Loosely spoon the stuffing into an oiled 3-quart baking dish.
- Cover and bake for 30 minutes; bake for an additional 20 minutes, uncovered.

I have a suggestion... Might taste different and might be more affordable also.

This sounds great! Our son has several food allergies and I think we might just give this a try - sounds easy. He used to have terrible intolerances too that would cause awful eczema - making even harder to find recipes that would work. Thankfully he is much better now since taking his Belly Boost probiotics for kids and we can find lots more foods for him to enjoy like the rest of us! :D
