This healthy and delicious recipe is perfect to make for the family.
•4 chicken thighs or breasts
•Salt and pepper to taste
•1/2 cup almond or all-purpose gluten-free flour
•3 tablespoons olive oil
•1 green or red bell pepper, chopped
•1 onion, chopped
•1 package of mushrooms
•3 garlic cloves, finely chopped
•3/4 cup dry white wine (optional)
•1 ( 28-ounce) can diced tomatoes with juice
•Or chopped tomato with marinara sauce
•3/4 cup reduced-sodium chicken broth
•3 tablespoons drained capers (optional)
•1 1/2 teaspoons dried oregano leaves
•1/4 cup chopped fresh basil leaves
Sprinkle the chicken pieces with 1 teaspoon of each salt and pepper. Place flour and chicken in a plastic bag and coat evenly.
Add the chicken pieces to oiled pan and sauté until golden on each side. Set aside.
Add the bell pepper, onion and garlic to the same pan and sauté over medium heat until tender Season with salt and pepper.
Add the wine and simmer until reduced by half. Add the tomatoes and juice, broth, capers, and oregano.
Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over medium-low heat until the chicken cooked through, about 20 minutes.
Serve over gluten-free pasta and sprinkle with oregano and basil!
