GREAT (Gluten-Free Resource Education and Awareness Training), a program by the NFCA (National Foundation for Celiac Awareness), ensures that its restaurants,caterers and cafeterias offer gluten-free food and products, and that its workers have knowledge of gluten-free foods and procedures. Initiated in 2010, participators are trained in gluten-free awareness, supplies and ingredients and cross-contamination, and receive, upon graduation, a window decal that demonstrates to customers that they can safely eat there without fear of gluten contamination. Philadelphia, being the foodie loving town that it is, has the most GREAT-certified restaurants and caterers by far, with more passing the course and being added all the time.
