Why does wheat make people sick?

If you are the one in 133 people who suffers from Celiac Disease, you may be experiencing uncomfortable or embarrassing symptoms, and not know why. Celiac disease is a disorder that affects people, young and old, and is marked by the inability to digest gluten, the protein found in many foods, but especially wheat, rye, barley and triticale.


Common symptoms of Celiac Disease include:

  • Bloating
  • Weight loss
  • Constipation
  • Behavioral changes
  • Diarrhea
  • Anemia
  • Fatigue
  • Irritable Bowel Syndrome
  • Abdominal pain
  • Flatulence

Gluten is often hidden in foods, so careful attention must be paid to ingredient lists containing hidden sources of gluten, which can include: starches, binders, fillers, extenders, and malt.

Celiac Disease is an auto-immune disorder, and is not classified as a food allergy. It may be triggered at any point in life and, because of this, it is often misdiagnosed. The only known treatment for Celiac Disease is strict avoidance of gluten.

Many products are now being labeled Gluten-Free. However, the FDA has not made an official ruling on what it considers gluten-free. The Celiac Disease Foundation is a helpful resource in identifying Celiac Disease, advising on how to obtain testing for Celiac Disease, and following a gluten-free diet.

 

Local natural grocers, such as Vitamin Cottage, Sunflower Markets, and Whole Foods, offer entire sections of gluten-free items to ease shopping for people with Celiac Disease. YAO Clinic, in Washington Park, stocks a great number of gluten-free staples, such as the MacroBars (pictured left) including bread, granola, drinks, and snacks.

Many local restaurants and national chains offer gluten-free menu options or entire gluten-free menus, upon request. It helps to call ahead and inform them of your needs. They can prepare a clean working surface to eliminate cross-contamination before you arrive.
