Chef Tracey Bloom made her debut on Supermarket Superstars with her gluten-free and allergen-friendly product called Free Square Meals. The product is the brain child of Chef Tracey Bloom and Brooklyn Cole; owners of local business Free Cuisine, which is a gluten-free and allergy-friendly food and lifestyle consultancy and product consortium.
The show Supermarket Superstars on Lifetime allows enterprising foodies to present their products to industry professionals for a chance to get them on supermarket shelves across the country. Three people complete on each episode, and at the end of the episode, someone wins a $10,000 check and the chance to compete for the grand prize of $100,000 in product development. Chef Tracey was the only professional chef on the episode, which I think was a detriment and led to her hasty exit.
Free Square Meals is an 'on the go' and 'ready to eat' meal that contains four components: artisan veggie crackers, sous-vide herb chicken, curried roasted chick peas, and chocolate-dipped apricots with seeds. All of the products are free of the top nine allergens: gluten/wheat, dairy/casein, soy, corn, egg, tree nuts, peanuts, fish, and shellfish. Chef Tracey created all of the recipes with an emphasis on not using any preservatives or enzymes to extend the shelf life of this refrigerated product.
After being diagnosed with gluten sensitivity in 2012, Tracey did what any accomplished chef would do – she developed a new style of cooking, free cuisine, that innovates gluten-free and allergy friendly ingredients in unique and delicious ways. Tracey admits that when she was diagnosed with a food intolerance she changed as a chef and this change has made a huge difference in how she approaches cooking for those who also have food intolerance.
Although the judges and focus group weren't 'feeling' Chef Tracey's product and she was voted off, I doubt this is the last we will hear about Free Square Meals. I really believe a product like this is missing from today's market and I am hopeful that one will be available for purchase soon.
