Getting your daily nutrients from a sweet potato

Most people think of sweet potatoes as a potato. Well don't be fooled because they're not! While white potatoes are considered starches, sweet potatoes are considered a root vegetable. Sweet potatoes are a complex carbohydrate that is great for your body. They are rich in dietary fiber, vitamins A and C, and even iron. For this reason, sweet potatoes rank at the top of number one nutritious vegetable! Sweet potatoes should be a staple in every person's diet, but especially the diets of vegans and people with Celiac's disease.

Not only are sweet potatoes great for you, they are also easy to prepare with your main course. You can easily microwave them to bake them as is for about 8 minutes on high. (Make sure to pierce each potato with a fork all over!) You can also chop sweet potatoes into long sticks or 1 inch cubes, toss with olive oil, and sprinkle with salt and chili powder and bake at 425F for approximately 20-25 minutes to make a delicious and flavorful side dish.

Sweet potatoes also make delicious soups and pies. Try adding diced sweet potatoes to your soup at least 20-30 minutes before you serve it so they cook through without getting mushy. Alternatively you can add vegetable broth to sauteed onions and sweet potatoes, along with some salt and pepper and parsley, and puree it all after the sweet potatoes are fork tender. Lastly, you can swap out pumpkin or squash puree for sweet potatoes in many recipes for pies. 

When thinking about cooking this fall and are heading into Paul's, the Farmer's Market or other grocery stores, look to the sweet potatoes to fill your dinner plate!

    I have never microwaved sweet potatoes but I am going to try it. I like the idea of cutting them into "french fries" and baking them. Thanks for the hints
