Garlic Parmesan Chicken

On these cold, brisk, winter days, are you not reminiscing about summer and fresh, delicious foods? Here is a fresh, summer inspired, healthy organic chicken recipe the whole family will love and bring warmth back into your home.

This recipe will bring the whole family around the kitchen table, but not keep you standing in the kitchen for hours preparing a healthy meal. The children will be begging you to make these easy, flavorful, "chicken nuggets" on a regular basis; they are guaranteed to make a statement.

Garlic Parmesan Chicken


4-6 sliced organic chicken breasts
1 cup extra virgin olive oil
1 cup Ian's gluten free breadcrumbs
1 cup Parmesan cheese
3 cloves garlic, grated


Preheat oven to 375 degrees. Grease, generously, a flat baking sheet with 1/4 cup of olive oil.

Set out two shallow or deep dishes. Take remaining olive oil and pour into first dish. Then combine Ian's gluten free breadcrumbs with Parmesan cheese and grated garlic in the second dish.

Take the chicken breasts and slice in half to make them thin. Dip the chicken, first into the olive oil, shaking off any excess. Then dip the chicken into the combination of breadcrumbs, Parmesan cheese and grated garlic, shaking off any excess.

Lay the breaded chicken cutlets on the greased baking sheet. Sprinkle any excess breadcrumbs and Parmesan cheese combination over each chicken piece.

Bake about 8-10 minutes on each side, or until the chicken is white in the middle. Bake time depends on the thickness of the chicken.


Be careful not to over bake so the cutlets will be moist.
