The restaurant chain, Buffalo Wild Wings offers a garlic Parmesan chicken that is garlicky enough to frighten any vampires lurking nearby but not so much as to cause an upset tummy. For a garlic lover, why relegate the flavor just to chicken wings? This rendition comes fairly close to BW3's recipe and the crunchy panko coating resembles fried chicken without the added fat. Best of all, it can be used to flavor an entire chicken.
Garlic lover's Parmesan chicken
3 lbs. bone-in chicken breasts
1 c. flour
1 pkg. dry Italian dressing seasoning
1 bottle creamy Italian dressing
1 c. panko bread crumbs
1/2 c. dry Parmesan cheese
In large bowl, mix together panko bread crumbs and Parmesan cheese. Set aside.
In large bowl, whisk together flour and dry Italian dressing seasoning. Dredge chicken breasts in seasoned flour.
Using a basting brush, coat floured chicken with thin layer of creamy Italian dressing. Dredge chicken in bread crumbs, coating thickly.
Arrange coated chicken in 13 x 9 baking pan lined with aluminum foil. Bake 45 - 55 minutes in 350 degree oven, or until juices run clear and coating is golden brown. Serves 4 - 6
