Summertime is the perfect opportunity to use fresh produce for any meal of the day. Whether vegetables are grown in a family garden or bought at a local farmer's market, fresh produce is always the way to go when cooking for the family. *Always remember to wash vegetables well before preparing them for cooking.
Enjoy this summer pasta recipe using fresh tomatoes and peppers from the garden.
2 large tomatoes, diced.
2 medium to large red bell peppers, diced
1 tbsp olive oil (extra virgin)
4 tbsp shredded parmesan
1 lb. angel hair pasta
Salt and pepper to taste
Bring large pot of salted water to a boil, adding angel hair pasta. Cook al dente. In a medium saucepan, add vegetables, olive oil, and salt and pepper. Cook over medium heat for about 10 minutes or until vegetables are tender. Drain pasta and toss with vegetable mixture. Top with 1 tbsp of parmesan cheese per serving. This recipe can also be served cold. Serves 4.
The ingredients above (minus the pasta) can also be used as a canape or bruschetta topping. Simply place cooked ingredients in a food processor until mix is at preferred consistency. Chill for at least 30 minutes. Add to toasted French bread slices or crackers for a tasty party snack.
