Full of flavor side dish, pasta salad

The following recipe is easy and a delicious side dish. It goes great with sweet citrus chicken and barbecue chicken

The basil in this salad makes it pop. It is a very important ingredient. Sometimes, looking for basil at grocery stores can be disappointing. Often there aren't very many choices, and sometimes those choices can be limp and black spotted- things you don't want for your basil.

The Herbal Garden brand at Meijer in Lexington, is a good choice for your basil. It is fresh and good quality. You can use the leftovers in tomato, basil and mozzarella salad

Wishbone Italian salad dressing is great to use in this recipe. It is filled with zesty flavor. If you don't have any, any brand will do. Enjoy! 

Pasta Salad


8 ounces, elbow macornoni, cooked till al dente and cooled  

2 vine ripe tomatoes, seeded and chopped

1/4 red onion, chopped

2 tablespoons, basil leaves, chopped

1/8 cup fresh mozzarella, chopped

1 clove garlic, very finely minced

1 lemon, juiced and zested

Dash of red pepper flakes

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon olive oil

2/3 cup Italian salad dressing such as Wishbone


In a large bowl combine all of the ingredients. Stir and chill or serve. Serves 4. Enjoy!
