Who would ask for more than a luscious, sparkling and colorful fresh flavors? This fruit salad is as colorful as Houston and full of wholesome goodness and good health. This tangy and sweet item will add lot of energy to the dining table.
Ingredients:
1 tin sliced mangoes in syrup
1 lemon
6- 7 fresh mint leaves, slightly crushed
5 medium size kiwi fruits, peeled and sliced lengthwise
2 cups seedless red grapes
1 cup seedless white grapes
1 medium sized pomegranate, seeds removed and reserved in refrigerator
Few fresh mint leaves for garnish
Method:
1) Drain the sliced mangoes and reserve 1 cup of syrup.
2) Peel 4 strips of lemon rind and take out 2 tablespoon of fresh lemon juice.
3) Mix the lemon juice with the reserved syrup, lemon rind and crushed mint leaves in a small microwave proof mixing bowl.
4) Cover with a cling film and microwave at high heat for about 3 minutes, till the mixture bubbles.
5) Do not remove the cover, cool down to room temperature and the refrigerate it for 20 minutes.
6) Chop the mango slices in medium size cubes and put in a large mixing bowl. Add the kiwi fruit, grapes and pomegranate seeds.
O7) Take out the syrup from the refrigerator and remove the lemon rind and mint leaves with a slotted spoon.
8) Pour the syrup of the fruit mix and toss it gently. Cover it well and refrigerate for another 10 minutes.
9) Served chilled and garnish with mint leaves.
