Fruit cheesecake cups

Combine chewy sugar cookies with soft cheesecake in this yummy dessert.

Cookie Cup Ingredients
¾ cup butter
1 cup sugar
1 egg
2 tsp. vanilla
2 cups flour
1 tsp. baking soda
2 tsp. cornstarch

Cheesecake Ingredients
12 oz cream cheese, room temp.
1 ¾ cups powdered sugar
1 ½ tsp. vanilla
Fresh fruit to top

Preheat oven to 350º. In a mixer, cream the butter and sugar. Begin by making the cookie dough. Beat in the egg and vanilla. Scrape down the sides and pulse the mixer a few times to make sure everything is well combined. In a separate bowl, stir together the dry ingredients. Slowly add this dry mixture into the mixer. You should have a thick dough. Use 2 tbsp. of dough to make balls of the cookie dough. Grease a cupcake pan then press the dough balls into the pan to form cups. Bake about 10 minutes. While your cookies are cooling, make the cheesecake. Combine ingredients in a mixer then scoop into the cooled cookie cups. Top with fresh fruit. Chill until the cheesecake filling has set, and serve.
