Fresh ravioli al forno

Let me share the recipe for something I made recently.

LIST OF INGREDIENTS

1 T olive oil
½ lb. Italian sausage, bulk, or removed from casing
1 onion, chopped
1 sweet pepper, any color, chopped
12 egg roll wrappers
1 28 oz. jar spaghetti sauce
1 cup red wine
1 cup shredded mozzarella cheese
salt and pepper to taste

Heat oil over medium-high heat, add sausage, onion, and pepper, and cook until sausage is brown, approximately 10 minutes. Season with salt and pepper to taste. Prepare up to one day ahead, or allow to cool.

Preheat oven to 350 degrees. Cut egg roll wrappers in 4 equal pieces. Brush edges of two of each four with water. Drop a heaping teaspoon or so of the sausage mixture on the middle of the square. Cover with the remaining wrappers, brush the edges again, and crimp closed with fingertips.

Add wine to the spaghetti sauce, and spread one-third of the mixture in a 9 X 12 baking dish. Add half the ravioli, cover with sauce mixture, then add the remaining ravioli. Cover with remaining sauce mixture, taking care to insure all ravioli are covered with sauce.

Cover with foil, and bake for 30 minutes. Top with cheese, bake for 5 more minutes, and serve.

I recommend sausage from Whole Foods. Theirs is clearly the best, but get it on sale (it often is). Don’t pay full price. Morning Sun Farm also makes high-quality sausage.
If you haven’t tried shopping Trader Joe’s for wine, you should. Their fresh pork Italian sausage is worth a try, too, and, like the wine, it’s very competitively priced. I also highly recommend their jarred spaghetti sauce.
