With the weather getting hotter and more entertaining going on, many of us turn to foods that keep us cool. Of course, there's no better treat that's synonymous with summer than ice cream. Whether it's homemade or even store-bought, ice cream is just the treat that says "summertime".
While there are scores of ice cream flavors on the market, one of the most popular flavors in recent years is the "cookies and cream" flavor. It's a simple combination of ice cream with cookies swirled throughout to give you two favorite treats rolled into one. I find it to be a clever and innovative flavor combination and wonder why nobody concocted the flavor earlier!
I'm sharing a recipe that is a different way to enjoy this luscious combination of cookies and ice cream called "Oreo Cookie Freeze". This is a rich and delectable dessert that's just for the chocolate fans! The chocolate flavor comes Oreo cookies, chocolate ice cream, and a creamy chocolate topping that goes over the ice cream. This is a layered dessert, so it has just as much visual appeal as it does taste appeal.
If you're entertaining a group over the July 4th holiday or anytime this summer, this makes a large dessert to serve a large number. It can also be made well in advance. This can be classified as the near-perfect dessert since it's flavored with chocolate, can be made ahead and serves a large number....what more can you ask for?

Indulge in this luscious and crowd-pleasing dessert this summer. Your "chocoholic" friends will love you for it!
OREO COOKIE FREEZE
- 28 Oreo cookies
- 1/4 cup melted butter
- 1/2 gallon chocolate ice cream
- 1 cup sugar
- 2/3 cup evaporated milk
- 1 tsp. vanilla extract
- 4 squares semi-sweet chocolate
- 6 tbls. butter
- 1 large tub whipped topping, such as Cool Whip
- 1 cup chopped, toasted pecans
Crush the cookies and mix with the 1/4 cup melted butter; spread in a 9x13 inch pan and freeze; soften the ice cream and spread over the cookies; refreeze; in a saucepan, place the sugar, evaporated milk, vanilla, chocolate and 6 tbls. butter; bring to a boil and cook for 1 minute; set aside to cool; pour over the ice cream layer and refreeze; mix the whipped topping with the nuts and spread over the chocolate layer; keep frozen until serving time. Serves about 20.
Variation: replace any favorite flavor of ice cream for the chocolate.
