This marinated cheese is guaranteed to be a huge hit at your next event. Any cheese that is listed can be substituted for your favorite cheese. Don't forget the wine!

Marinated Cheese

1/2 Cup olive oil

1/2 Cup white white vinegar

3 tbsp. chopped fresh parsley

3 tbsp. minced green onions

1 tsp. sugar

3/4 tsp. dried basil

1/2 tsp. salt

1/2 tsp pepper

3 cloves garlic minced

1 (2 oz.) jar pimento, drained

1 (8 oz.) block cream cheese, chilled

1 (8 oz.) block medium cheddar cheese, chilled

Combine all bu cheese in a jar, cover tightly, and shake vigorously. Set aside.

Cut cream cheese in half lengthwise. Cut crosswise into 1/4" slices.

Cut and trim cheddar into equal number of 1/4" slices, same size as cream cheese slices.

Stand cheese slices on their edges in a shallow dish, alternating types of cheese and pour marinade over cheese.

Cover with plastic wrap and marinate in refrigerator at least 8 hours.

To serve: Transfer cheese to serving platter with a slight lip. Spoon marinade over cheese and serve with crackers.
