Food trend for 2014 - kale powder

Kale has been celebrated as a super-food for decades. Kale is a type of cabbage that actually looks more like wild green leafy lettuce. It is packed with vitamins and antioxidants. A single serving of kale has 7.5 grams of protein, 134% of the USRDA of vitamin C, 206% of the USRDA of vitamin A, Omega-3 and Omega-6 fatty acids, folic acid, and a whole list of amino acids. The problem with kale is the taste. Most people either don't like it as a salad green, or refuse to try it because it just looks to undomesticated. And it has a strong unappealing smell.

Enter kale powder - an alternative form of kale that can be mixed into smoothies, casseroles, soups, or other foods. Powdered kale is often freeze-dried as that is the best method for preserving its complex chemistry without destroying the vital nutrients. Kale powder has become popular in smoothie bars, health food stores, and organic bakeries. Some pet treat bakeries even use it in dog treats.

Amazon shows 198 listings for kale powder across several subcategories including health and personal care, grocery and gourmet food, beauty, and pet supplies. 69% are Prime Eligible. Brands include Hoosier Hill Farm, Eclectic Institute, Green Powder Organic, Amazing Grass, and Vibrant Health just to name a few. Some offerings are Kosher, organic, non-GMO, or gluten-free.
