Flying Dog Offal beer dinner at 13. 5% Wine Bar

Sarah Acconcia, executive chef at 13. 5% Wine Bar in Baltimore’s Hampden neighborhood takes offal to the next level, pairing it with flavors such as Tire Bite Golden Ale and Snake Dog IPA from the Flying Dog Brewery (located in Frederick), during a special dinner on Monday, Nov. 21 beginning with a cocktail hour at 6:00 p.m.

The dinner is $70 per person, which includes all food and five beer pairings (there will be a cash bar during the cocktail hour). There are only 50 seats available and reservations should be made by calling 13.5% at 410-889-1064.

Acconcia’s menu includes as appetizers, a Reuben pizza that incorporates rye crust, corned pork tongue, sauerkraut and caraway seed and pheasant liver mousse on crostini with pickled onion.

Subsequent courses include seared beef heart on toast (paired with Tire Bite Golden Ale), Truck Patch Heads and Tails, pork head rillettes and crispy tails (from local pork supplier, Truck Patch Farms), paired with In Heat Wheat; bison criadillas, accompanied by celeriac puree and Snake Dog IPA. Acconcia’s final course features a spicy Brazilian
Feijoda, a rich stew featuring black beans, lamb, beef and pork served with Road Dog Porter. Dessert is a hops- infused chocolate concoction accompanied by Flying Dog’s Horn Dog Barleywine ’08.
